Mexican Fish Tacos

1 lb. skate, coley, pollack or cod fillets, skinned and cubed |
2 tsp. sunflower oil |
1 small onion, sliced |
1 green pepper, deseeded and chopped |
1 clove garlic, crushed |
15 oz. can chili beans |
3 Tbsp. taco sauce, mild or hot |
1 Tbsp. tomato puree |
8-12 taco shells or tortilla chips |
lettuce |
cheese |
salsa |
tortilla chips (optional) |
Directions:
1. Heat the oil in a large pan and cook the onion, pepper and garlic until soft and transparent.
2. Stir in chili beans, taco sauce and tomato purée.
3. Add prepared fish, stir carefully, cover and simmer gently for 5-6 min. until fish is cooked.
4. Serve in taco shells with lettuce, cheese and salsa or with tortilla chips
* Serving suggestions: 8- 12 taco shells, shredded crisp lettuce and grated cheddar cheese or 1 packet of tortilla chips
